Quick Egg Fried Rice

A very quick egg fried rice! For me this is the perfect way to use up stuff in the fridge. If you want to make a complete meal out of this, add any protein you have on hand. ⁣

Total Time:

  • Prep time: 20 minutes

  • Cook time: 10 minutes

Ingredients:

  • 1.5 cups of rice ⁣

  • 2-3 tbsp oil⁣

  • 1 tbsp of butter ⁣

  • 2 white of a spring onion chopped ⁣

  • 1/2 an onion chopped ⁣

  • 2-3 cloves of garlic minced ⁣

  • 1 tsp of toasted sesame seeds⁣

  • Any veggies you gave diced up ⁣

  • 2 tsp of toasted sesame oil ⁣

  • 1/2 chicken stock cube⁣

  • 1/4th Cup of water⁣

  • 2-3 tbsp of soy sauce ⁣

  • 2 eggs beaten ⁣

  • Salt and pepper to taste ⁣


Method:


In a nice sized wok or frying pan, heat 2 tbsp of oil and butter... add the onion, garlic, spring onion and sesame seeds and stir fry till fragrant. Add the veggies, stock cube, soy sauce, pepper and sesame oil. Once the veggies are cooked... move them to one side and pour the last tbsp of oil and fry the beaten eggs. Mix in the rice. Adjust seasonings. Garnish with lots of cilantro and greens of the spring onions.
