Masala Cheese Toast

This is like your Bachpan ka cheese toast but a little elevated. Like Laila calls it - a bit extra. Do let me know if you made these!
Servings:
Makes 6 large cheese toasts
Ingredients:
Sour dough bread or any of your choice but thick cut
1 cup of shredded cheese (buy a block and fresh shred, the pre shredded cheese has a flour coating and doesn’t melt as well) I use tilamook
1/2 a cup of more of shredded mozzarella
1/2 a can or more of corn
1/2 a green bell pepper diced
1/2 a red pepper diced
Handful of cilantro
Spices:
1 pinches of oregano
1/2 tsp red chili flakes
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chaat masala
1/2 tsp fresh black pepper
1/2 tsp chicken powder
1/2 tsp roasted cumin
1/2 tsp coriander powder.
Method:
Set oven to 350. Butter both sides of the bread, place it in a large baking tray and toast it for 5-6 mins to get toasted. Meanwhile mix all the rest of the ingredients in a big bowl. Remove the baking sheet from the oven, top off each slide with the cheese mixture. I top off the cheese toasts with some chopped green chilies and extra red chili flakes. Bake for an additional 8 mins or until cheese is melty. And broil for 2-3 mins for color. Remove from the tray after a few mins of cooling. Slice, top off with sliced green onions.
Enjoy!
